Description

Slow-braised holiday brisket that turns a simple cut of beef into a tender, deeply flavored centerpiece with rich sauce and comforting aromas.

Ingredients

Scale
  • 1.8 kg beef brisket
  • 3 large yellow onions, sliced
  • 6 garlic cloves, peeled
  • 3 tablespoons tomato paste
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 2 bay leaves

Instructions

  1. Preheat the oven to 160°C.
  2. Season the brisket evenly with salt, black pepper, and paprika.
  3. Heat olive oil in a heavy Dutch oven over medium heat and sear the brisket on both sides until deeply browned.
  4. Remove the brisket and add sliced onions and garlic to the pot, cooking until soft and fragrant.
  5. Stir in tomato paste, brown sugar, dried thyme, and bay leaves until well combined.
  6. Return the brisket to the pot and pour in the beef broth.
  7. Cover tightly and transfer to the oven to braise for about 3 hours, turning once, until fork tender.
  8. Remove from the oven, let rest briefly, then slice against the grain and spoon sauce over the top before serving.

Notes

  • Letting the brisket rest before slicing helps keep it juicy.
  • The flavor improves after a night in the refrigerator.
  • Slice against the grain for the most tender texture.
