- 2 large chicken cutlets
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 cup tomato sauce
- Fresh basil leaves
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F.
- Beat eggs in a bowl. In another bowl, mix breadcrumbs with parmesan, salt, and pepper.
- Heat olive oil in a frying pan over medium heat.
- Dip chicken cutlets into eggs, then coat with breadcrumb mixture.
- Fry chicken for 3 to 4 minutes per side until golden and crispy.
- Transfer chicken to a baking dish, top with tomato sauce and mozzarella cheese.
- Bake for 10 minutes until cheese is melted and bubbly.
- Garnish with fresh basil and serve hot.
Notes
- Use freshly grated cheese for better flavor and melting
- Do not overcrowd the pan to keep the coating crispy
- Let the chicken rest briefly before frying for better coating adhesion
