- 1/2 cup unsalted butter
- 1 cup water
- 2 tablespoons granulated sugar (for dough)
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon
- Vegetable oil, for frying
Instructions
- Heat vegetable oil in a deep pan over medium heat until it reaches 350°F. Line a tray with paper towels for draining.
- In a medium saucepan, melt and brown the butter over medium heat until golden and nutty. Add water, 2 tablespoons sugar, and salt. Bring to a simmer.
- Add flour all at once and stir vigorously until a dough forms and pulls away from the pan sides. Remove from heat and let cool slightly.
- Add eggs one at a time, mixing until smooth and shiny. Stir in vanilla extract.
- Using a cookie scoop or spoon, drop small balls of dough into the hot oil. Fry in batches, turning until golden brown, about 3–4 minutes per batch.
- In a bowl, mix 1/2 cup sugar with cinnamon. Roll warm churro bites in the mixture until fully coated.
- Serve warm with chocolate sauce, berry jam, or caramel for dipping.
Notes
- Make the dough ahead and refrigerate for up to 6 hours.
- Use a cookie scoop for even sizes and cooking.
- Reheat leftovers in a 350°F oven for 5 minutes to re-crisp.
- Freeze uncooked dough scoops and fry straight from frozen.
