Description

These brown butter churro bites are crispy on the outside, tender inside, and rolled in warm cinnamon sugar. Perfect for parties, brunch, or anytime cravings, they’re an easy, crowd-pleasing treat with rich, nutty flavor.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup water
  • 2 tablespoons granulated sugar (for dough)
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon
  • Vegetable oil, for frying

Instructions

  1. Heat vegetable oil in a deep pan over medium heat until it reaches 350°F. Line a tray with paper towels for draining.
  2. In a medium saucepan, melt and brown the butter over medium heat until golden and nutty. Add water, 2 tablespoons sugar, and salt. Bring to a simmer.
  3. Add flour all at once and stir vigorously until a dough forms and pulls away from the pan sides. Remove from heat and let cool slightly.
  4. Add eggs one at a time, mixing until smooth and shiny. Stir in vanilla extract.
  5. Using a cookie scoop or spoon, drop small balls of dough into the hot oil. Fry in batches, turning until golden brown, about 3–4 minutes per batch.
  6. In a bowl, mix 1/2 cup sugar with cinnamon. Roll warm churro bites in the mixture until fully coated.
  7. Serve warm with chocolate sauce, berry jam, or caramel for dipping.

Notes

  • Make the dough ahead and refrigerate for up to 6 hours.
  • Use a cookie scoop for even sizes and cooking.
  • Reheat leftovers in a 350°F oven for 5 minutes to re-crisp.
  • Freeze uncooked dough scoops and fry straight from frozen.
