Description

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/3 cup buffalo sauce
  • 2 tablespoons cream cheese, softened
  • 1 1/2 cups cheddar cheese, shredded
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 1 tablespoon butter
  • 2 tablespoons green onions, sliced

Instructions

  1. Heat a large skillet over medium heat.
  2. In a mixing bowl, mash the chickpeas slightly with a fork or potato masher.
  3. Stir in buffalo sauce, cream cheese, garlic powder, onion powder, salt, black pepper, and green onions until combined.
  4. Melt a small amount of butter in the skillet.
  5. Spread part of the buffalo chickpea mixture over half of one tortilla.
  6. Sprinkle cheddar cheese evenly over the filling and fold the tortilla in half.
  7. Cook the quesadilla for 3 to 4 minutes per side until golden brown and crispy with melted cheese inside.
  8. Transfer to a cutting board and let rest briefly before slicing.
  9. Serve warm with extra buffalo sauce or dipping sauce if desired.
