- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 1 tablespoon butter
- 2 tablespoons green onions, sliced
Instructions
- Heat a large skillet over medium heat.
- In a mixing bowl, mash the chickpeas slightly with a fork or potato masher.
- Stir in buffalo sauce, cream cheese, garlic powder, onion powder, salt, black pepper, and green onions until combined.
- Melt a small amount of butter in the skillet.
- Spread part of the buffalo chickpea mixture over half of one tortilla.
- Sprinkle cheddar cheese evenly over the filling and fold the tortilla in half.
- Cook the quesadilla for 3 to 4 minutes per side until golden brown and crispy with melted cheese inside.
- Transfer to a cutting board and let rest briefly before slicing.
- Serve warm with extra buffalo sauce or dipping sauce if desired.
