Description

A cozy yet elegant bowl of spaghetti tossed in melted butter and Parmesan, finished with a creamy ball of fresh burrata, cracked black pepper, and parsley. Simple ingredients come together for a silky, comforting pasta dish that feels restaurant-worthy in just 20 minutes.

Ingredients

Scale
  • 12 ounces spaghetti
  • 4 tablespoons unsalted butter
  • 8 ounces burrata cheese (1 large ball)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon salt (for pasta water), plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat Your Equipment: Bring a large pot of water to a rolling boil over high heat. Add 1 teaspoon of salt.
  2. Combine Ingredients: Measure the butter, grate the Parmesan, finely chop the parsley, and let the burrata sit at room temperature.
  3. Prepare Your Cooking Vessel: Add the spaghetti to the boiling water and cook until al dente, about 9 to 10 minutes. Reserve 1/4 cup of pasta water, then drain.
  4. Assemble the Dish: Return the drained pasta to the pot or a large skillet over low heat. Add the butter and a splash of reserved pasta water. Toss until the butter melts and coats the noodles.
  5. Cook to Perfection: Stir in the Parmesan cheese and add more reserved pasta water as needed, tossing until glossy and lightly creamy.
  6. Finishing Touches: Transfer to a serving bowl. Place the whole burrata on top. Sprinkle with black pepper and chopped parsley.
  7. Serve and Enjoy: Slice into the burrata just before serving and gently toss into the warm pasta.

Notes

  • Reserve pasta water to help create a silky sauce texture.
  • Use freshly grated Parmesan for smoother melting.
  • Let the burrata rest at room temperature for 10 minutes before serving.
  • Do not rinse the pasta after draining to preserve starch.
