- 4 medium sweet potatoes
- 1 cup butterkase cheese, sliced or shredded
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh chives, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix olive oil, salt, and black pepper.
- Place the sweet potatoes on a baking sheet and brush them evenly with the seasoned oil.
- Roast the sweet potatoes for about 40 minutes until tender.
- Remove from the oven, slice them open, and gently fluff the inside.
- Add butterkase cheese into each potato.
- Return to the oven and bake for another 10 minutes until the cheese is melted and slightly golden.
- Remove from oven, sprinkle chopped chives on top, and serve warm.

- Use similar-sized sweet potatoes for even cooking.
- Do not overfill to allow proper cheese melting.
