  • Olive oil: 2 tablespoons
  • Salt: 1 teaspoon, or to taste
  • Black pepper: 0.5 teaspoon, freshly ground
  • Nutmeg: 0.25 teaspoon
  • Bread slices: 4 thick slices
  • Butter: 2 tablespoons, softened
  • Cheese slices: 150 grams, sliced

Instructions

  1. Heat olive oil in a large pot over medium heat, add the chopped onion, and cook for about 5 minutes until soft and translucent, then add the garlic and cook for 1 minute.
  2. Add the cubed butternut squash, season with salt, black pepper, and nutmeg, and stir to coat evenly.
  3. Pour in the vegetable broth, bring to a gentle boil, reduce the heat, and simmer for 20 minutes until the squash is very tender.
  4. Blend the soup carefully until completely smooth, then stir in the heavy cream and adjust seasoning if needed.
  5. Butter one side of each bread slice, place cheese between two slices with the buttered sides facing outward.
