- 300 g boneless chicken breast, sliced into strips
- 2 tbsp olive oil
- 2 tsp Cajun seasoning
- 1 medium onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 3 cloves garlic, minced
- 250 g pasta (penne or fettuccine)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tsp paprika
- Salt and pepper, to taste
- 30 g grated Parmesan cheese
- Fresh parsley, chopped for garnish
Instructions
- Season the sliced chicken breast with Cajun seasoning, paprika, salt, pepper, and 1 tablespoon olive oil. Toss well to coat.
- Heat the remaining olive oil in a large skillet over medium high heat. Cook chicken for 5 to 7 minutes until golden and cooked through. Set aside.
- In the same skillet, sauté onion and bell peppers for 4 to 5 minutes until softened. Add minced garlic and cook for 1 minute.
- Pour in chicken broth and simmer for 2 minutes. Stir in heavy cream and simmer until the sauce thickens slightly.
- Meanwhile, boil pasta in salted water until al dente. Drain and reserve a little pasta water.
- Return chicken to skillet, add pasta, and toss everything together with the sauce. Stir in Parmesan cheese. Adjust seasoning.
- Let the pasta sit for a minute or two before serving to let the sauce cling better. Garnish with fresh parsley.
Notes
- Use freshly grated Parmesan for best flavor.
- Add a splash of pasta water if sauce gets too thick.
- Reheat gently with cream to restore creaminess.
- Store leftovers in airtight container up to 2 days.
