Description

Creamy, spicy, and packed with bold Cajun flavors, this pasta dish brings together tender chicken, bell peppers, garlic, and a velvety sauce for the ultimate comfort meal.


Ingredients

  • 300 g boneless chicken breast, sliced into strips
  • 2 tbsp olive oil
  • 2 tsp Cajun seasoning
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 250 g pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 30 g grated Parmesan cheese
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the sliced chicken breast with Cajun seasoning, paprika, salt, pepper, and 1 tablespoon olive oil. Toss well to coat.
  2. Heat the remaining olive oil in a large skillet over medium high heat. Cook chicken for 5 to 7 minutes until golden and cooked through. Set aside.
  3. In the same skillet, sauté onion and bell peppers for 4 to 5 minutes until softened. Add minced garlic and cook for 1 minute.
  4. Pour in chicken broth and simmer for 2 minutes. Stir in heavy cream and simmer until the sauce thickens slightly.
  5. Meanwhile, boil pasta in salted water until al dente. Drain and reserve a little pasta water.
  6. Return chicken to skillet, add pasta, and toss everything together with the sauce. Stir in Parmesan cheese. Adjust seasoning.
  7. Let the pasta sit for a minute or two before serving to let the sauce cling better. Garnish with fresh parsley.

Notes

  • Use freshly grated Parmesan for best flavor.
  • Add a splash of pasta water if sauce gets too thick.
  • Reheat gently with cream to restore creaminess.
  • Store leftovers in airtight container up to 2 days.
