Description

Ingredients

  • Boneless chicken breast: 450 g, sliced into strips
  • Pasta (penne or fettuccine): 300 g
  • Olive oil: 2 tablespoons
  • Cajun seasoning: 2 teaspoons
  • Garlic: 4 cloves, minced
  • Onion: 1 medium, finely chopped
  • Heavy cream: 240 ml
  • Chicken broth: 120 ml
  • Parmesan cheese: 60 g, freshly grated
  • Bell peppers: 2 medium, sliced
  • Paprika: 1 teaspoon
  • Black pepper: 0.5 teaspoon
  • Salt: 0.75 teaspoon
  • Fresh parsley: 2 tablespoons, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
  2. Toss the sliced chicken with Cajun seasoning, paprika, salt, and black pepper until evenly coated.
  3. Heat olive oil in a large skillet over medium heat and cook the chicken for 5 to 7 minutes until golden and fully cooked. Remove and set aside.
  4. In the same skillet, add the chopped onion and cook for 3 minutes until softened, then stir in the garlic and cook for 30 seconds.
  5. Add the sliced bell peppers and cook for 2 to 3 minutes until slightly tender.
  6. Pour in the chicken broth and heavy cream, stirring gently and allowing the sauce to simmer for about 5 minutes until slightly thickened.
  7. Stir in the Parmesan cheese until fully melted and smooth.
  8. Return the chicken to the skillet, add the cooked pasta, and toss until everything is well coated in the sauce.
  9. Taste, adjust seasoning if needed, and garnish with fresh parsley before serving.
