Ingredients
- Boneless chicken breast: 450 g, sliced into strips
- Pasta (penne or fettuccine): 300 g
- Olive oil: 2 tablespoons
- Cajun seasoning: 2 teaspoons
- Garlic: 4 cloves, minced
- Onion: 1 medium, finely chopped
- Heavy cream: 240 ml
- Chicken broth: 120 ml
- Parmesan cheese: 60 g, freshly grated
- Bell peppers: 2 medium, sliced
- Paprika: 1 teaspoon
- Black pepper: 0.5 teaspoon
- Salt: 0.75 teaspoon
- Fresh parsley: 2 tablespoons, chopped
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente. Drain and set aside.
- Toss the sliced chicken with Cajun seasoning, paprika, salt, and black pepper until evenly coated.
- Heat olive oil in a large skillet over medium heat and cook the chicken for 5 to 7 minutes until golden and fully cooked. Remove and set aside.
- In the same skillet, add the chopped onion and cook for 3 minutes until softened, then stir in the garlic and cook for 30 seconds.
- Add the sliced bell peppers and cook for 2 to 3 minutes until slightly tender.
- Pour in the chicken broth and heavy cream, stirring gently and allowing the sauce to simmer for about 5 minutes until slightly thickened.
- Stir in the Parmesan cheese until fully melted and smooth.
- Return the chicken to the skillet, add the cooked pasta, and toss until everything is well coated in the sauce.
- Taste, adjust seasoning if needed, and garnish with fresh parsley before serving.
