Description

Bold, smoky, and satisfying, this Cajun Dirty Rice with Smoked Sausage is packed with flavor and comes together in just one pan. Perfect for busy nights or weekend feasts.


Ingredients

  • 14 oz smoked sausage, sliced into coins
  • 1 cup long grain white rice, uncooked
  • 1 medium onion, finely chopped
  • 2 ribs celery, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sausage and cook until browned, about 5-6 minutes. Remove and set aside.
  3. Sauté onion, celery, and bell pepper in the same pan for 4-5 minutes until softened. Add garlic, Cajun seasoning, paprika, and thyme. Cook for 1 minute.
  4. Add rice and stir to coat with seasoning. Return sausage to the pan.
  5. Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  6. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
  7. Serve warm and garnish with chopped parsley if desired.

Notes

  • For extra spice, use hot andouille sausage or add cayenne pepper.
  • Substitute veggie broth and plant-based sausage for a vegetarian version.
  • Store leftovers in an airtight container and reheat with a splash of broth.
