Bold, smoky, and satisfying, this Cajun Dirty Rice with Smoked Sausage is packed with flavor and comes together in just one pan. Perfect for busy nights or weekend feasts.

- 14 oz smoked sausage, sliced into coins
- 1 cup long grain white rice, uncooked
- 1 medium onion, finely chopped
- 2 ribs celery, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 2 tsp Cajun seasoning
- 1 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sausage and cook until browned, about 5-6 minutes. Remove and set aside.
- Sauté onion, celery, and bell pepper in the same pan for 4-5 minutes until softened. Add garlic, Cajun seasoning, paprika, and thyme. Cook for 1 minute.
- Add rice and stir to coat with seasoning. Return sausage to the pan.
- Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
- Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
- Serve warm and garnish with chopped parsley if desired.
Notes
- For extra spice, use hot andouille sausage or add cayenne pepper.
- Substitute veggie broth and plant-based sausage for a vegetarian version.
- Store leftovers in an airtight container and reheat with a splash of broth.
