- 1 cup black lentils
- 2 large onions, thinly sliced
- 1/2 cup plain yogurt
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Rinse the black lentils thoroughly under cold water.
- In a saucepan, combine lentils with 3 cups of water and bring to a gentle boil, then simmer until tender.
- Heat olive oil in a large skillet over medium heat and add sliced onions.
- Cook the onions slowly, stirring often, until deeply golden and caramelised, about 20 minutes.
- Add minced garlic, tomato paste, cumin, paprika, salt, and black pepper to the onions and stir well.
- Add the cooked lentils to the skillet and mix everything together.
- Let the mixture simmer for about 10 minutes, adding a splash of water if needed to adjust consistency.
- Taste and adjust seasoning if necessary.
- Serve warm with a swirl of yogurt and a sprinkle of fresh parsley.

- Cook onions slowly for the best depth of flavor.
- Do not overcook lentils to keep their texture intact.
