Ingredients

- 300 grams spaghetti
- 3 large onions, thinly sliced
- 4 garlic cloves, minced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1/2 cup parmesan cheese, freshly grated
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- Slice the onions and mince the garlic.
- Heat olive oil and butter in a large skillet over medium heat.
- Add the sliced onions with a pinch of salt and cook slowly for 20 to 25 minutes until golden and caramelized. Add garlic and cook for 1 to 2 minutes.
- Cook the spaghetti until al dente. Reserve 1/2 cup of pasta water, then transfer pasta to the skillet. Toss with the onions, adding pasta water as needed.
- Stir in parmesan cheese and black pepper, adjusting seasoning if needed.
- Serve immediately with fresh parsley on top.
