Description

A rich and comforting pasta dish where sweet caramelized onions and aromatic garlic coat tender spaghetti in a silky, savory sauce finished with parmesan and fresh herbs.


Ingredients

  • 300 grams spaghetti
  • 3 large onions, thinly sliced
  • 4 garlic cloves, minced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup parmesan cheese, freshly grated
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Slice the onions and mince the garlic.
  3. Heat olive oil and butter in a large skillet over medium heat.
  4. Add the sliced onions with a pinch of salt and cook slowly for 20 to 25 minutes until golden and caramelized. Add garlic and cook for 1 to 2 minutes.
  5. Cook the spaghetti until al dente. Reserve 1/2 cup of pasta water, then transfer pasta to the skillet. Toss with the onions, adding pasta water as needed.
  6. Stir in parmesan cheese and black pepper, adjusting seasoning if needed.
  7. Serve immediately with fresh parsley on top.
