- 2 ripe avocados
- 6 strips turkey bacon
- 1 cup freshly grated parmesan cheese
- 2 large egg yolks
- 3 garlic cloves
- 2 tablespoons olive oil
- 1 teaspoon freshly cracked black pepper
- 1 teaspoon salt
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a large pot of salted water to a boil.
- Cook the turkey bacon in a skillet over medium heat until crispy, then transfer to a paper towel lined plate.
- Blend the avocados, egg yolks, garlic, olive oil, half of the parmesan cheese, and black pepper until smooth and creamy.
- Cook the spaghetti until al dente according to package instructions. Reserve 1 cup of pasta water before draining.
- Toss the hot pasta with the avocado mixture, adding reserved pasta water gradually until the sauce becomes silky and coats the noodles evenly.
- Stir in the crispy turkey bacon and remaining parmesan cheese.
- Garnish with fresh parsley and extra black pepper before serving immediately.
