Description

Crispy on the outside and irresistibly gooey on the inside, these Cheese Stuffed Croquettes make the perfect comfort food snack or appetizer. Filled with melty mozzarella and wrapped in a seasoned mashed potato mixture, they fry up to a beautiful golden crunch every time.


Ingredients

  • 3 cups mashed potatoes, cooled
  • 1 cup mozzarella cheese, cut into small cubes or shredded
  • 2 large eggs, beaten
  • 1 cup all purpose flour
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons chopped parsley
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the mashed potatoes with garlic powder, onion powder, salt, black pepper, and parsley until smooth and well seasoned.
  2. Scoop a portion of potato mixture, flatten it in your hand, and place a piece of mozzarella in the center. Wrap the potato around the cheese and roll into a compact croquette shape.
  3. Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Coat each croquette in flour, then egg, then breadcrumbs.
  4. Place the coated croquettes on a tray and chill for at least 10 minutes to help them firm up.
  5. Heat oil in a deep pan over medium heat. Fry croquettes for 3 to 4 minutes, turning until golden and crisp.
  6. Remove from the oil and drain on paper towels. Serve warm for the best cheese pull.
