- 3 cups mashed potatoes, cooled
- 1 cup mozzarella cheese, cut into small cubes or shredded
- 2 large eggs, beaten
- 1 cup all purpose flour
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons chopped parsley
- Oil for frying
Instructions
- In a mixing bowl, combine the mashed potatoes with garlic powder, onion powder, salt, black pepper, and parsley until smooth and well seasoned.
- Scoop a portion of potato mixture, flatten it in your hand, and place a piece of mozzarella in the center. Wrap the potato around the cheese and roll into a compact croquette shape.
- Prepare three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Coat each croquette in flour, then egg, then breadcrumbs.
- Place the coated croquettes on a tray and chill for at least 10 minutes to help them firm up.
- Heat oil in a deep pan over medium heat. Fry croquettes for 3 to 4 minutes, turning until golden and crisp.
- Remove from the oil and drain on paper towels. Serve warm for the best cheese pull.
