Description

Crispy on the outside, gooey on the inside — these Cheese Stuffed Croquettes are the ultimate comfort snack or appetizer.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup grated cheddar cheese
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 large eggs
  • 1½ cups breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Heat about 1 inch of vegetable oil in a deep skillet over medium heat until shimmering but not smoking.
  2. In a large bowl, mix mashed potatoes, grated cheese, cornstarch, salt, pepper, and garlic powder until well combined.
  3. Line a tray with parchment paper and get your dredging station ready with one bowl of beaten eggs and another with breadcrumbs.
  4. Scoop out portions of the mixture, roll into balls or small logs, dip each in egg, then roll in breadcrumbs to coat completely.
  5. Fry croquettes in batches, turning occasionally, until golden brown on all sides, about 3-4 minutes per batch.
  6. Drain on paper towels and sprinkle lightly with salt while still hot.
  7. Serve warm with your favorite dipping sauce.
