- 2 cups mashed potatoes
- 1 cup grated cheddar cheese
- 2 tablespoons cornstarch
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 2 large eggs
- 1½ cups breadcrumbs
- Vegetable oil for frying
Instructions
- Heat about 1 inch of vegetable oil in a deep skillet over medium heat until shimmering but not smoking.
- In a large bowl, mix mashed potatoes, grated cheese, cornstarch, salt, pepper, and garlic powder until well combined.
- Line a tray with parchment paper and get your dredging station ready with one bowl of beaten eggs and another with breadcrumbs.
- Scoop out portions of the mixture, roll into balls or small logs, dip each in egg, then roll in breadcrumbs to coat completely.
- Fry croquettes in batches, turning occasionally, until golden brown on all sides, about 3-4 minutes per batch.
- Drain on paper towels and sprinkle lightly with salt while still hot.
- Serve warm with your favorite dipping sauce.
Notes
- Chill the croquette mixture before shaping for easier handling.
- Double dip in breadcrumbs for an extra crispy crust.
- Use sharp cheddar for more intense cheesy flavor.
