Description

Ingredients

  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1.5 cups cheddar cheese, shredded
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika

Instructions

  1. Preheat a large 12-inch skillet over medium-high heat.
  2. Add the ground beef and diced onions, cooking until the meat is browned and onions are translucent.
  3. Drain any excess grease, then stir in minced garlic, salt, pepper, and smoked paprika for one minute.
  4. Stir in the dry rice, diced tomatoes, and beef broth, scraping the bottom of the pan to release flavor.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 18 to 20 minutes until rice is tender.
  6. Turn off the heat, sprinkle shredded cheddar cheese over the top, and cover for two minutes to let it melt completely.
  7. Fluff gently with a fork to incorporate the cheese and serve hot.
