- 2 cups beef broth
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1.5 cups cheddar cheese, shredded
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
Instructions
- Preheat a large 12-inch skillet over medium-high heat.
- Add the ground beef and diced onions, cooking until the meat is browned and onions are translucent.
- Drain any excess grease, then stir in minced garlic, salt, pepper, and smoked paprika for one minute.
- Stir in the dry rice, diced tomatoes, and beef broth, scraping the bottom of the pan to release flavor.
- Bring to a boil, then reduce heat to low, cover, and simmer for 18 to 20 minutes until rice is tender.
- Turn off the heat, sprinkle shredded cheddar cheese over the top, and cover for two minutes to let it melt completely.
- Fluff gently with a fork to incorporate the cheese and serve hot.
