- 2 cups chicken pieces, cut into bite-sized pieces
- 3 cups cauliflower florets
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup heavy cream
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 375°F.
- In a large bowl, combine chicken pieces, cauliflower florets, garlic, olive oil, salt, and black pepper until evenly coated.
- Lightly grease a baking dish.
- Spread the mixture evenly into the baking dish, pour heavy cream over it, then top with shredded cheddar and mozzarella cheese.
- Bake for 35 minutes until the cheese is golden and bubbling and the chicken is fully cooked.
- Remove from the oven and sprinkle with chopped fresh parsley.
- Let it cool slightly, then serve and enjoy.
Notes
- Roast cauliflower slightly beforehand for deeper flavor if desired
- Use freshly shredded cheese for a smoother melt
