- 1 pound breakfast sausage
- 24 wonton wrappers
- 1 cup sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1/2 cup red bell pepper, finely diced
- 1/2 cup green bell pepper, finely diced
- 2 tablespoons green onions, thinly sliced
- Cooking spray, enough to lightly coat two 12-cup muffin tins
Instructions
- Preheat the oven to 375°F and lightly coat two 12-cup muffin tins with cooking spray.
- Heat a skillet over medium heat. Cook the breakfast sausage until browned and crumbled, about 6 to 8 minutes.
- Stir in the red bell pepper and green bell pepper, then cook for 2 more minutes until slightly softened.
- Remove the skillet from the heat and stir in the green onions, 1/2 cup of the sharp cheddar cheese, and 1/2 cup of the mozzarella cheese.
- Press 2 wonton wrappers into each muffin cup, staggering the corners to form cup shapes.
- Spoon the sausage mixture evenly into each wonton cup.
- Top with the remaining sharp cheddar cheese and remaining mozzarella cheese.
- Bake for 10 to 12 minutes, until the wonton edges are golden brown and the cheese is melted and bubbling.
- Let the cups rest in the pan for 2 to 3 minutes, then carefully remove and serve warm.
Notes
- Drain excess grease from the sausage if needed to keep the wonton cups crisp.
- Freshly shredded cheese melts more smoothly than pre-shredded cheese.
- Store leftovers in the refrigerator for up to 3 days and reheat in the oven for the best texture.
- You can prepare the filling a day ahead and assemble just before baking.
