- 1 sheet puff pastry, thawed
- 2 ½ cups fresh cherries, pitted
- ¼ cup granulated sugar
- 1 ½ tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 large egg
- 1 tablespoon coarse sugar
- Vanilla ice cream, for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, combine cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until evenly coated.
- Roll out the puff pastry into a 10–12 inch circle on a floured surface and transfer to the prepared baking sheet.
- Spoon the cherry mixture into the center, leaving a 2-inch border. Fold the edges over the filling, pleating as needed.
- Beat the egg and brush it over the pastry edges. Sprinkle with coarse sugar.
- Bake for 30–35 minutes or until the crust is golden and filling is bubbling.
- Cool slightly before serving. Top with vanilla ice cream if desired.
Notes
- Chill the assembled galette before baking to help it keep its shape.
- Use parchment paper to avoid sticking and for easy cleanup.
- Fresh cherries work best, but frozen (thawed and drained) are a great backup.
