Description

A rustic cherry puff galette with juicy fresh cherries nestled in a flaky golden crust, finished with a scoop of vanilla ice cream. This dessert is easy to make, stunning to serve, and tastes like summer in every bite.

  • 1 sheet puff pastry, thawed
  • 2 ½ cups fresh cherries, pitted
  • ¼ cup granulated sugar
  • 1 ½ tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 tablespoon coarse sugar
  • Vanilla ice cream, for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until evenly coated.
  3. Roll out the puff pastry into a 10–12 inch circle on a floured surface and transfer to the prepared baking sheet.
  4. Spoon the cherry mixture into the center, leaving a 2-inch border. Fold the edges over the filling, pleating as needed.
  5. Beat the egg and brush it over the pastry edges. Sprinkle with coarse sugar.
  6. Bake for 30–35 minutes or until the crust is golden and filling is bubbling.
  7. Cool slightly before serving. Top with vanilla ice cream if desired.

Notes

  • Chill the assembled galette before baking to help it keep its shape.
  • Use parchment paper to avoid sticking and for easy cleanup.
  • Fresh cherries work best, but frozen (thawed and drained) are a great backup.
