- 2 cups boiled potatoes, mashed
- 1 cup cooked shredded chicken
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 eggs, beaten (divided)
- 1/2 cup all-purpose flour
- 1 cup breadcrumbs
- Vegetable oil for shallow frying
Instructions
- Mash the boiled potatoes in a mixing bowl until smooth.
- Add shredded chicken, Parmesan, parsley, garlic powder, salt, pepper, and one beaten egg. Mix thoroughly.
- Shape the mixture into small balls or ovals.
- Set up a breading station with flour, second beaten egg, and breadcrumbs in separate bowls.
- Dredge each croquette in flour, dip in egg, and coat with breadcrumbs.
- Heat vegetable oil in a frying pan over medium heat.
- Fry croquettes in batches until golden and crispy, about 3–4 minutes per side.
- Drain on paper towels and let cool slightly before serving.
Notes
- Chill croquettes before frying for better shape retention.
- Panko breadcrumbs give a crispier coating.
- You can bake or air-fry for a lighter version.
