Description

These crispy chicken and potato croquettes are the perfect snack or appetizer, made with pantry staples and full of flavor. Crunchy on the outside, creamy and savory on the inside—they’re a total crowd-pleaser.


Ingredients

  • 2 cups boiled potatoes, mashed
  • 1 cup cooked shredded chicken
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 eggs, beaten (divided)
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs
  • Vegetable oil for shallow frying

Instructions

  1. Mash the boiled potatoes in a mixing bowl until smooth.
  2. Add shredded chicken, Parmesan, parsley, garlic powder, salt, pepper, and one beaten egg. Mix thoroughly.
  3. Shape the mixture into small balls or ovals.
  4. Set up a breading station with flour, second beaten egg, and breadcrumbs in separate bowls.
  5. Dredge each croquette in flour, dip in egg, and coat with breadcrumbs.
  6. Heat vegetable oil in a frying pan over medium heat.
  7. Fry croquettes in batches until golden and crispy, about 3–4 minutes per side.
  8. Drain on paper towels and let cool slightly before serving.

Notes

  • Chill croquettes before frying for better shape retention.
  • Panko breadcrumbs give a crispier coating.
  • You can bake or air-fry for a lighter version.
