Description
Crispy on the outside, buttery and herby on the inside, this Chicken Kyiv is a golden classic that melts in your mouth with every bite.

- 100g unsalted butter
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 2 large boneless, skinless chicken breasts, halved and pounded flat
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil for shallow frying
Instructions
- Mix the softened butter with parsley, dill, minced garlic, lemon juice, salt, and pepper. Roll into a log using plastic wrap and chill until firm.
- Flatten the chicken breasts gently with a meat mallet. Place a piece of chilled herb butter inside each piece and roll it tightly. Wrap in plastic wrap and freeze for 20–30 minutes.
- Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.
- Unwrap each chicken roll and coat in flour, then egg, then breadcrumbs. Repeat the egg and breadcrumb coating for extra crunch.
- Heat oil in a skillet over medium heat. Fry each roll for 6–8 minutes per side until golden and cooked through.
- Drain on paper towels. Let rest briefly, then slice and serve warm.
Notes
- Freezing the rolls before frying helps prevent the butter from leaking out.
- Double coating with breadcrumbs gives an extra crispy shell.
- You can bake instead of fry for a lighter version, but it won’t be as crispy.
