- 8 ounces mushrooms, sliced
- 1 tablespoon all-purpose flour
- 1 cup chicken broth
- 1/2 cup sour cream
- 1 teaspoon Dijon mustard
- Fresh parsley, chopped, for garnish
- Egg noodles or rice, for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter. Sauté onions until soft, then add garlic and mushrooms. Cook until mushrooms are browned.
- Sprinkle flour over the mixture and stir to coat. Slowly add chicken broth, stirring constantly to avoid lumps.
- Return chicken to the skillet. Simmer for 5 to 7 minutes until the sauce thickens.
- Stir in sour cream and Dijon mustard. Cook for 1 minute more, then adjust seasoning if needed.
- Serve over egg noodles or rice, garnished with chopped parsley.
