  • 1 pound ground beef
  • 1 cup chili beans
  • 1 medium onion, diced
  • 1 medium tomato, diced
  • 2 cups shredded cheddar cheese
  • 2 tablespoons chopped chives
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat.
  2. In a small bowl, combine chili powder, paprika, garlic powder, salt, and black pepper.
  3. Add olive oil to the skillet and allow it to heat.
  4. Add diced potatoes and cook until golden and crispy, stirring occasionally. Remove the potatoes from the skillet and set aside.
  5. In the same skillet, cook ground beef and diced onion until the beef is browned and the onion is softened.
  6. Stir in chili beans, diced tomato, and the prepared seasoning mixture.
  7. Return the crispy potatoes to the skillet and mix gently until everything is evenly combined.
  8. Sprinkle shredded cheddar cheese over the top and allow it to melt.
