Instructions
- Heat a large skillet over medium heat.
- In a small bowl, combine chili powder, paprika, garlic powder, salt, and black pepper.
- Add olive oil to the skillet and allow it to heat.
- Add diced potatoes and cook until golden and crispy, stirring occasionally. Remove the potatoes from the skillet and set aside.
- In the same skillet, cook ground beef and diced onion until the beef is browned and the onion is softened.
- Stir in chili beans, diced tomato, and the prepared seasoning mixture.
- Return the crispy potatoes to the skillet and mix gently until everything is evenly combined.
- Sprinkle shredded cheddar cheese over the top and allow it to melt.
- Finish with chopped chives and serve hot directly from the skillet.
