Description

Chocoflan, also known as ‘Impossible Cake,’ is a magical Mexican dessert that features layers of moist chocolate cake, creamy flan, and a glossy caramel topping. Each slice reveals a stunning contrast of textures and flavors, making it a showstopper for any occasion.


Ingredients

  • 1 cup granulated sugar (for caramel)
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 5 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup buttermilk
  • 1 large egg (for cake)
  • 3/4 cup sugar (for cake batter)

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a large baking dish for the water bath and place a greased bundt pan inside it.
  2. Melt granulated sugar in a saucepan over medium heat until golden. Pour into the bottom of the bundt pan to form caramel layer.
  3. In a bowl, whisk condensed milk, evaporated milk, eggs, and vanilla until smooth. Set aside.
  4. In another bowl, mix flour, cocoa powder, baking soda, and salt. In a separate bowl, combine melted butter, buttermilk, egg, and sugar. Mix wet and dry ingredients together to form cake batter.
  5. Pour chocolate cake batter over the caramel in the bundt pan. Gently pour flan mixture on top using the back of a spoon.
  6. Fill the outer baking dish with hot water to reach halfway up the bundt pan.
  7. Bake for about 60 minutes until a toothpick inserted in the cake comes out clean and flan is slightly jiggly.
  8. Cool at room temperature, then refrigerate for at least 4 hours or overnight.
  9. Loosen edges with a knife and invert onto a serving plate. Slice and serve chilled.

Notes

  • Use a water bath to prevent cracks and ensure even baking.
  • Chill completely before flipping for clean layers.
  • Strain the flan mixture for extra smoothness.
