- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup pumpkin puree
- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1/2 cup semi-sweet chocolate chips
- 3 tablespoons milk
- 1 teaspoon vanilla extract
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- In a large bowl, combine flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, ginger, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- In another bowl, whisk together pumpkin puree, eggs, milk, and vanilla extract.
- Gently mix the wet ingredients into the dry ingredients until just combined, then fold in the chocolate chips.
- Turn the dough onto a floured surface, shape into a circle, and cut into 8 triangles.
- Place the scones on the prepared baking sheet and bake for 18 to 22 minutes until golden brown.
- Allow to cool slightly, then optionally drizzle with glaze or dust with powdered sugar before serving.
Notes
- Keep the butter cold for a flaky texture.
- Do not overmix the dough to maintain softness.
- You can chill the dough for 10 minutes before baking for better shape.
