Description

Ingredients

  • 2 ¾ cups whole milk
  • ½ cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 3 tablespoons cornstarch
  • ¼ teaspoon salt
  • 3 large egg yolks
  • 4 ounces semi-sweet chocolate, finely chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Gradually whisk in the milk until smooth.
  2. In a separate bowl, whisk egg yolks. Add a small amount of the milk mixture to temper, then gradually add yolks into the saucepan, whisking constantly.
  3. Place saucepan over medium heat. Cook while stirring constantly until mixture thickens and begins to bubble.
  4. Remove from heat and stir in chopped chocolate, butter, and vanilla extract until smooth.
  5. Pour pudding through a fine-mesh sieve into a bowl. Press plastic wrap directly onto the surface and chill for at least 2 hours before serving.
