- 2 cups cooked chicken, chopped
- 2 cups romaine lettuce, finely chopped
- 1/3 cup parmesan cheese, finely grated or shaved
- 1/2 cup Caesar dressing
- 1 medium tomato, seeded and diced
- 1/4 teaspoon black pepper
- 1 teaspoon lemon juice
- 4 large flour tortillas
Instructions
- Heat a large skillet or grill pan over medium heat if you plan to toast the wraps.
- In a medium mixing bowl, combine the chopped cooked chicken, finely chopped romaine lettuce, parmesan cheese, Caesar dressing, diced tomato, black pepper, and lemon juice. Stir until evenly coated.
- Lay the tortillas flat on a clean surface.
- Divide the filling evenly among the 4 tortillas, placing it in the center of each one.
- Fold in the sides and roll each tortilla tightly into a wrap.
- Place the wraps seam-side down in the warm skillet and cook for 1 to 2 minutes per side, until lightly golden and gently crisp.
- Let the wraps rest for 1 minute, then slice in half and serve.
Notes
- Warm the tortillas briefly before rolling to help prevent tearing.
- Start with the listed amount of dressing and add more only if needed to avoid soggy wraps.
- For the freshest texture, assemble just before serving.
- Rotisserie chicken works very well in this recipe.
