Description

Soft French toast rolls filled with sweetened cream cheese, cooked until golden, coated in cinnamon sugar, and finished with a vanilla drizzle.

  • 10 slices white sandwich bread, crusts removed
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar, divided
  • 2 teaspoons vanilla extract, divided
  • 2 teaspoons ground cinnamon, divided
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup whole milk
  • 3 tablespoons unsalted butter, divided
  • 1 pinch salt
  • 1 to 2 teaspoons water or milk, for icing

Instructions

  1. In a small bowl, mix the softened cream cheese with 1/2 cup powdered sugar, 1 teaspoon vanilla extract, and 1 teaspoon ground cinnamon until smooth.
  2. In a shallow bowl, whisk together the eggs, whole milk, and salt.
  3. In another bowl, stir together the granulated sugar and remaining 1 teaspoon ground cinnamon.
  4. Remove the crusts from the bread and flatten each slice with a rolling pin until thin and flexible.
  5. Spread a thin layer of the cream cheese mixture over each slice of bread, then roll each slice up snugly.
  6. Heat 2 tablespoons of the butter in a large nonstick skillet over medium-low heat.
  7. Dip each roll quickly in the egg mixture, turning to coat lightly.
  8. Place the rolls seam-side down in the skillet and cook for 2 to 3 minutes per side, turning gently until all sides are golden brown and lightly crisp. Add the remaining 1 tablespoon butter between batches if needed.
  9. While still warm, roll the cooked pieces in the cinnamon sugar mixture until evenly coated.
  10. In a small bowl, stir together the remaining 1/2 cup powdered sugar, remaining 1 teaspoon vanilla extract, and 1 to 2 teaspoons water or milk to make a thick drizzle.
  11. Drizzle the icing over the warm rolls and serve immediately.

Notes

  • Use very soft sandwich bread for the easiest rolling.
  • Do not soak the rolls too long in the egg mixture or they may become too soft.
  • Cook over medium-low heat so the centers warm through without burning the outside.
  • For best texture, serve warm right after icing.
