- 2 cups cooked shredded chicken
- 4 slices sliced bread
- 1 cup shredded cheddar cheese
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons butter (softened)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dried parsley
Instructions
- Heat a skillet or griddle over medium heat.
- In a bowl, mix shredded chicken, mayonnaise, Dijon mustard, salt, black pepper, and dried parsley until well combined.
- Butter one side of each bread slice and place them butter-side down on a plate.
- Layer the chicken mixture on two slices of bread and top with shredded cheddar cheese.
- Cover with the remaining slices of bread, butter-side up.
- Place sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted.
- Remove from heat and let rest for 1 minute before slicing and serving.
