Ingredients

  • 3 to 4 pounds corned beef brisket
  • 4 large carrots, peeled and cut into chunks
  • 6 medium potatoes, peeled and halved
  • 1 medium head cabbage, cut into wedges
  • 1 large onion, peeled and halved
  • 3 cloves garlic
  • 1 teaspoon peppercorns
  • 2 bay leaves
  • 1 teaspoon salt
  • 4 cups beef broth

Instructions

  1. Place a large pot on the stove over medium heat.
  2. Add the corned beef, peppercorns, bay leaves, garlic, onion, and beef broth into the pot.
  3. Ensure all ingredients are submerged, adding water if needed.
  4. Bring to a gentle boil, then reduce heat to a simmer and cover.
  5. Simmer for 2.5 to 3 hours until the beef is tender. Add potatoes and carrots halfway through cooking. Add cabbage during the last 30 minutes.
  6. Remove the beef and let it rest for 10 minutes before slicing against the grain.
  7. Serve sliced beef with vegetables and spoon broth over the top.
