- 3 to 4 pounds corned beef brisket
- 4 large carrots, peeled and cut into chunks
- 6 medium potatoes, peeled and halved
- 1 medium head cabbage, cut into wedges
- 1 large onion, peeled and halved
- 3 cloves garlic
- 1 teaspoon peppercorns
- 2 bay leaves
- 1 teaspoon salt
- 4 cups beef broth
Instructions
- Place a large pot on the stove over medium heat.
- Add the corned beef, peppercorns, bay leaves, garlic, onion, and beef broth into the pot.
- Ensure all ingredients are submerged, adding water if needed.
- Bring to a gentle boil, then reduce heat to a simmer and cover.
- Simmer for 2.5 to 3 hours until the beef is tender. Add potatoes and carrots halfway through cooking. Add cabbage during the last 30 minutes.
- Remove the beef and let it rest for 10 minutes before slicing against the grain.
- Serve sliced beef with vegetables and spoon broth over the top.
