Description

- 1 can black beans, drained and rinsed
- 1 can black-eyed peas, drained and rinsed
- 1 cup sweet corn
- 1 cup cherry tomatoes, halved
- 2 avocados, diced
- 1/2 cup red onion, finely chopped
- 1 cup bell peppers, diced
- 1/4 cup fresh cilantro, chopped
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine black beans, black-eyed peas, corn, cherry tomatoes, red onion, and bell peppers.
- Add chopped cilantro, lime juice, olive oil, salt, and black pepper.
- Gently toss everything together until well combined.
- Let the mixture sit for about 10 minutes to allow the flavors to blend.
- Gently fold in the diced avocado right before serving.
- Serve chilled or at room temperature.
Notes
- Add avocado just before serving to keep it fresh and prevent browning
- Chill the mixture for better flavor blending
- Adjust lime juice and seasoning to taste
