- 6 boneless, skinless chicken thighs
- 200g cured chorizo, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3 garlic cloves, minced
- 1 medium yellow onion, thinly sliced
- 1 tsp smoked paprika
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet and sear chicken thighs on both sides until golden, then remove and set aside.
- In the same skillet, sauté onion and garlic until softened.
- Lightly grease a baking dish and spread sautéed onion and garlic on the bottom.
- Place seared chicken on top, tucking chorizo slices between the pieces.
- Pour cream and broth over the dish. Sprinkle paprika, salt, and pepper.
- Bake uncovered for 30–35 minutes until bubbling and chicken is fully cooked.
- Garnish with chopped parsley and let rest for 5 minutes before serving.
Notes
- Use cured chorizo for best flavor and texture.
- Let the dish rest after baking for the sauce to thicken.
- Serve with mashed potatoes, rice, or crusty bread.
