Description

A creamy and comforting pasta made with a silky corn-based sauce, completely dairy-free yet rich and satisfying.


Ingredients

  • 250 grams curly pasta
  • 2 cups sweet corn kernels
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 1 cup vegetable broth
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon red chili flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. In a blender, combine corn kernels, garlic, vegetable broth, salt, and black pepper, then blend until smooth.
  3. Heat olive oil in a pan over medium heat.
  4. Cook the pasta according to package instructions, then drain and reserve some pasta water.
  5. Pour the corn sauce into the pan and warm gently.
  6. Add the cooked pasta to the pan and mix well, adding a splash of reserved pasta water if needed.
  7. Sprinkle red chili flakes and chopped parsley, then stir gently.
  8. Serve warm and enjoy.
