- 1 pound ribeye or sirloin steak
- 12 ounces rotini pasta
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 tablespoons butter
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat a large skillet over medium high heat.
- Season the steak with salt, pepper, and paprika.
- Add olive oil to the skillet and heat until shimmering.
- Sear the steak for 3 to 4 minutes per side, then remove and let it rest.
- In the same pan, melt butter, add garlic, then stir in tomato paste and heavy cream. Simmer gently and add parmesan cheese until smooth.
- Cook the pasta in salted water until al dente, then drain.
- Toss the pasta with the creamy sauce until well coated.
- Slice the steak and place it over the pasta.
- Garnish with chopped parsley and serve warm.
Notes
- Let the steak rest before slicing to keep it juicy.
- Reserve a little pasta water to adjust the sauce consistency if needed.
- Cook the sauce on low heat to prevent curdling.
