- 500 grams chicken thighs, boneless and skinless, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 4 tablespoons sweet chilli sauce
- 200 ml heavy cream
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Salt and pepper to taste
- 2 spring onions, finely chopped, for garnish
Instructions
- Heat a large skillet over medium heat and add olive oil.
- In a bowl, mix sweet chilli sauce, heavy cream, soy sauce, and lime juice until smooth.
- Ensure the skillet is hot and add chicken pieces, cooking until golden brown on all sides.
- Pour in the sauce mixture and simmer for 5-7 minutes until chicken is cooked and sauce thickens.
- Season with salt and pepper, stir in spring onions, and adjust lime juice as needed.
- Serve with rice or noodles and drizzle extra sauce over the top.
