- 1 pound (450 grams) potato gnocchi
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 can (14 ounces / 400 grams) crushed tomatoes
- 1 cup (240 milliliters) heavy cream
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1/2 cup (50 grams) grated parmesan cheese
- 1/4 cup fresh basil leaves, loosely packed
- 2 burrata cheese balls (about 4 ounces each)
Instructions
- Bring a large pot of salted water to a gentle boil over medium high heat.
- In a deep skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant.
- Stir in crushed tomatoes, salt, and black pepper. Lower the heat slightly and pour in the heavy cream. Stir well and let the sauce simmer gently for 8 to 10 minutes until slightly thickened.
- Add the gnocchi to the boiling water and cook according to package instructions, about 2 to 3 minutes, until they float to the surface. Drain well.
- Transfer the drained gnocchi directly into the skillet with the sauce. Toss gently to coat.
- Add grated parmesan cheese and stir until melted and fully incorporated into the sauce.
- Turn off the heat and place the burrata balls on top of the hot gnocchi so they begin to soften.
- Tear fresh basil over the dish, break open the burrata, and serve immediately.
Notes
- Reserve a small amount of pasta water to loosen the sauce if needed.
- Do not overcook the gnocchi, remove them as soon as they float.
- Add a pinch of chili flakes for a subtle spicy kick.
- Freshly grated parmesan melts better and gives a smoother texture.
