- 4 chicken cutlets, pounded thin
- 4 slices cooked ham
- 4 slices Swiss cheese
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
Instructions
- Lay the chicken cutlets flat and layer each with one slice of ham and one slice of cheese. Roll tightly and secure with toothpicks.
- Set up a breading station with three bowls: flour in one, beaten eggs in another, and breadcrumbs seasoned with salt and pepper in the third.
- Dredge each chicken roll in flour, then dip in eggs, then coat in breadcrumbs.
- In a skillet, heat butter and olive oil over medium heat until melted and shimmering.
- Cook the chicken rolls seam-side down for 5–6 minutes per side, or until golden and cooked through.
- Let rest for 5 minutes before slicing and serving.
Notes
- Use a meat thermometer to ensure the internal temperature reaches 165°F.
- Chilling the assembled rolls before frying helps them hold their shape.
- Double dredging can give you extra crunch.
- To bake instead of fry, preheat oven to 400°F and bake for 25–30 minutes.
