Description
Crispy, golden tortilla cones packed with a deeply seasoned ground beef and vibrant bell pepper filling, finished with bubbly melted mozzarella cheese.

- 6 large flour tortillas (25–30 cm)
- 400 g ground beef
- 100 g mozzarella cheese, shredded
- 1 medium yellow onion, finely chopped
- 4 cloves garlic, minced
- 1 small red bell pepper, diced
- 1 small green bell pepper, diced
- 1 tbsp tomato paste
- 100 ml soy milk
- 1 tbsp paprika
- 1 tsp chili powder
- 1 tsp turmeric
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp garam masala
- ½ tsp salt
- 1 tsp chopped fresh parsley
- Cooking spray or oil
Instructions
- Heat a little oil in a pan over medium heat, add the finely chopped yellow onion, and sauté until soft.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Add the ground beef and cook until fully browned, breaking it apart as it cooks.
- Stir in the tomato paste, soy milk, diced red and green bell peppers, and all seasonings (paprika, chili powder, turmeric, garlic powder, black pepper, garam masala, and salt). Cook until slightly thickened, then remove from heat and let cool slightly.
- Cut the flour tortillas in half. Roll each semi-circle tightly into a cone shape and secure the overlapping edge with a toothpick.
- Preheat your oven to 190°C (375°F) or an air fryer to 180°C (356°F).
- For the oven method, place cones on a baking tray lined with parchment paper, lightly spray with cooking spray, and bake for 10–12 minutes until crispy and golden. For the air fryer method, place them in the basket without touching, spray with cooking spray, and air fry for 6–8 minutes.
- Carefully fill each crispy cone with the prepared warm beef mixture and top generously with shredded mozzarella cheese.
- Return to the oven for 5 minutes or the air fryer for 3–4 minutes until the cheese is completely melted and bubbly.
- Garnish with a sprinkle of fresh chopped parsley and serve warm.
Notes
- Warm the tortillas in the microwave for 15 seconds before rolling to prevent cracking.
- Ensure the bottom point of the cone is tightly wrapped to prevent the filling and melting cheese from leaking.
- Always remove the toothpicks before serving to your guests.
