Description

  • 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 4 cups cooked white rice
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1 tablespoon hot sauce
  • 1 tablespoon lemon juice
  • 4 green onions, thinly sliced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat a large skillet over medium-high heat. If the rice is not already cooked, prepare it first so it is warm and ready for serving.
  2. In a large bowl, toss the chicken thighs with Cajun seasoning, garlic powder, onion powder, paprika, salt, black pepper, and cornstarch until evenly coated.
  3. In a small bowl, stir together the mayonnaise, hot sauce, and lemon juice until smooth.
  4. Add the olive oil to the hot skillet. Place the chicken in a single layer and cook in batches if needed.
  5. Cook the chicken for 4 to 5 minutes per side, turning as needed, until golden, lightly crispy, and cooked through.
  6. Divide the warm rice among 4 bowls. Top with the cooked chicken, then drizzle with the spicy mayo.
  7. Finish with sliced green onions and chopped parsley, then serve immediately.
