- 1 lb chicken thighs, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium red onion, sliced
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 6 medium flour tortillas
- 2 tablespoons olive oil
- 2 tablespoons fajita seasoning
- 1 lime, juiced
- Optional: sour cream or guacamole for serving
Instructions
- Preheat your skillet over medium-high heat.
- In a bowl, toss chicken, peppers, and onion with olive oil and fajita seasoning.
- Add the mixture to the hot skillet and cook until the chicken is cooked through and vegetables are tender and slightly charred. Remove from skillet.
- Wipe the skillet clean. Place a tortilla in the skillet, sprinkle cheese, add filling, top with more cheese, and place another tortilla on top or fold if using one.
- Cook until both sides are golden and crispy, pressing slightly with a spatula. Repeat for all tacos.
- Drizzle with lime juice and serve warm with sour cream or guacamole.
