- 2 cups white rice (uncooked)
- 2 cups green cabbage (shredded)
- 1 small red onion (thinly sliced)
- 1 medium cucumber (sliced)
- 1/2 cup fresh cilantro (chopped)
- 2 whole lime
- 1/2 cup mayonnaise
- 3 tablespoons chili sauce
- 3 cloves garlic (minced)
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat a large skillet over medium heat and cook the rice according to package instructions.
- In a bowl, combine chicken pieces with salt, black pepper, minced garlic, and 1 tablespoon olive oil.
- Add 2 tablespoons olive oil to the skillet and heat until shimmering.
- Cook the chicken in batches until golden and crispy, then remove from the pan.
- In a bowl, mix chili sauce, juice from 2 lime, and 2 tablespoons mayonnaise, then toss the cooked chicken in this sauce.
- Return the coated chicken to the skillet and cook briefly until the sauce thickens and clings to the chicken.
- In another bowl, combine shredded cabbage, sliced red onion, sliced cucumber, chopped cilantro, and a squeeze of lime juice to make the slaw.
- Mix the remaining mayonnaise with a little chili sauce to create a creamy drizzle.
- Assemble the bowls by adding rice, topping with chicken, placing slaw on the side, and finishing with the drizzle.
