- 2 medium zucchinis, cut into fries
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil spray
- 1/2 cup marinara sauce (for dipping)
Instructions
- Preheat your oven to 425°F. Place a wire rack over a baking sheet and lightly spray with olive oil.
- In one bowl, whisk the eggs. In another bowl, mix panko breadcrumbs, parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Dip each zucchini fry into the egg, then coat with the breadcrumb mixture. Place each on the prepared rack.
- Bake for 20 to 25 minutes, flipping halfway through, until golden and crispy.
- Sprinkle with additional parmesan and parsley if desired.
- Serve hot with marinara sauce for dipping.
