Description

Ingredients

  • 2 medium zucchinis, cut into fries
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray
  • 1/2 cup marinara sauce (for dipping)

Instructions

  1. Preheat your oven to 425°F. Place a wire rack over a baking sheet and lightly spray with olive oil.
  2. In one bowl, whisk the eggs. In another bowl, mix panko breadcrumbs, parmesan, garlic powder, Italian seasoning, salt, and pepper.
  3. Dip each zucchini fry into the egg, then coat with the breadcrumb mixture. Place each on the prepared rack.
  4. Bake for 20 to 25 minutes, flipping halfway through, until golden and crispy.
