- 4 cups vegetable oil, for frying

Instructions
- Rinse potato slices under cold water and soak for 20 minutes.
- Drain and pat slices thoroughly dry with paper towels.
- Heat oil in a deep pot to 350°F.
- Fry potato slices in small batches for 3 to 4 minutes or until golden and crisp.
- Remove chips with a slotted spoon and drain on paper towels or a cooling rack.
- Immediately sprinkle with sea salt while still hot.
- Serve warm or let cool completely before storing.
