- 2 big onions, sliced into thick rings
- 1 cup all-purpose flour (130-150gr), divided
- 1 tablespoon cornstarch
- 250 ml (or 1 cup) cold sparkling water
- 1 tablespoon paprika
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon chili powder
- 1 teaspoon salt (to taste)
- 1 teaspoon black pepper (to taste)
- 2 cups panko breadcrumbs
- 1 teaspoon dried parsley
- 1 tablespoon store-bought crispy fried onions, crushed
- 4 cups vegetable oil, for frying
- 2 tablespoons mayonnaise
- 1 teaspoon sriracha
- 1 teaspoon garlic powder (for sauce)
- 1 teaspoon onion powder (for sauce)
- 1 teaspoon dried parsley (for sauce)
- 1 teaspoon fresh lemon juice
Instructions
- Pour frying oil into a heavy deep Dutch oven until it reaches a depth of two inches, heating it steadily over medium-high heat until it reaches 350°F.
- Whisk together your all-purpose flour, cornstarch, paprika, onion powder, garlic powder, chili powder, salt, and black pepper in a spacious mixing bowl.
- Gradually pour the cold sparkling water into your seasoned flour blend, whisking gently until you create a perfectly smooth, lump-free batter.
- Set up your breading station by dusting your sliced onion rings in plain flour first, dipping them completely into the smooth batter, and tossing them firmly into the panko breadcrumbs mixed with salt, dry parsley, garlic powder, and crushed crispy onions.
- Carefully drop the breaded rings into the hot oil in small batches, frying them for roughly three to four minutes until they are beautifully golden brown on both sides.
- Use a slotted spoon to rescue the crunchy treats from the hot oil, transferring them immediately to a wire cooling rack to drain.
- Whisk your mayonnaise, sriracha, garlic powder, onion powder, salt, pepper, dried parsley, and lemon juice together in a small bowl, then serve it instantly alongside your hot platter.
Notes
- Note: Peel away the thin inner membrane of each onion ring to help the coating stick flawlessly without sliding off.
- Note: Do not overcrowd the frying pot or the oil temperature will drop, causing the rings to become soggy.
