Description

A quick and crispy potato-egg wrap that’s perfect for breakfast or a snack, ready in just 10 minutes


Ingredients

  • Potatoes: 1 medium (about 150g), peeled and shredded
  • Eggs: 2 large
  • Salt: 1/2 teaspoon
  • Black Pepper: 1/4 teaspoon
  • Olive Oil: 1 tablespoon
  • Butter: 1 teaspoon
  • Optional Herbs (Parsley or Chives): 1 teaspoon, finely chopped
  • Wrap or Tortilla: 1 large

Instructions

  1. Preheat a nonstick skillet over medium heat with olive oil and butter.
  2. In a bowl, mix shredded potatoes with eggs, salt, pepper, and herbs until well combined.
  3. Lightly grease the skillet and ensure it’s hot for even crisping.
  4. Place the mixture evenly on the skillet and gently press to form a compact wrap.
  5. Fry for 3–4 minutes on each side until golden and crispy, carefully flipping with a spatula.
  6. Check seasoning, add extra herbs if desired, and ensure the wrap is cooked through.
  7. Slide the wrap onto a plate, slice if desired, and serve immediately.

Notes

  • Use a thin layer of potato mixture for even crisping.
  • Don’t crowd the pan; cook one wrap at a time for best results.
  • Flip carefully to maintain the golden crust.
  • Sprinkle a little cheese inside for added richness.
