A quick and crispy potato-egg wrap that’s perfect for breakfast or a snack, ready in just 10 minutes
Ingredients
- Potatoes: 1 medium (about 150g), peeled and shredded
- Eggs: 2 large
- Salt: 1/2 teaspoon
- Black Pepper: 1/4 teaspoon
- Olive Oil: 1 tablespoon
- Butter: 1 teaspoon
- Optional Herbs (Parsley or Chives): 1 teaspoon, finely chopped
- Wrap or Tortilla: 1 large
Instructions
- Preheat a nonstick skillet over medium heat with olive oil and butter.
- In a bowl, mix shredded potatoes with eggs, salt, pepper, and herbs until well combined.
- Lightly grease the skillet and ensure it’s hot for even crisping.
- Place the mixture evenly on the skillet and gently press to form a compact wrap.
- Fry for 3–4 minutes on each side until golden and crispy, carefully flipping with a spatula.
- Check seasoning, add extra herbs if desired, and ensure the wrap is cooked through.
- Slide the wrap onto a plate, slice if desired, and serve immediately.
Notes
- Use a thin layer of potato mixture for even crisping.
- Don’t crowd the pan; cook one wrap at a time for best results.
- Flip carefully to maintain the golden crust.
- Sprinkle a little cheese inside for added richness.
