Description

Whimsical, thread-like potato strands spun into tight individual nest clusters, seasoned with savory spices, and fried until shatteringly crisp and golden brown.


Ingredients

  • 1 l vegetable oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 160 g vegan mayo
  • 1 tbsp sriracha sauce
  • 1 tsp maple syrup
  • 2 tbsp fresh parsley, finely minced

Instructions

  1. Pour vegetable oil into a large deep skillet to a depth of two inches and heat to 360°F (182°C).
  2. In a small bowl, mix together garlic powder, onion powder, smoked paprika, sea salt, and black pepper.
  3. Peel the russet potatoes and run them through a countertop spiralizer fitted with a fine julienne shredding blade.
  4. Rinse the long potato strands thoroughly in a bowl of cold water to remove excess starch, then drain well.
  5. Place the strands inside a clean kitchen towel and squeeze aggressively to extract all hidden moisture.
  6. Transfer dry potato ribbons to a clean bowl, toss gently with the mixed spices, then spin small handfuls into tight nest clusters.
  7. Gently lower the compact bundles into the hot oil using tongs and fry for three to four minutes per side until deep golden and rigid.
  8. Lift the crispy bites from the oil and transfer them immediately to a wire cooling rack to drain.
  9. Whisk the vegan mayo, sriracha sauce, and maple syrup together in a small bowl until completely smooth.
  10. Arrange the warm potato nests on a platter, garnish with minced parsley, and serve immediately alongside the dipping sauce.
