- 6 cups low sodium chicken broth
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 4 cloves garlic, minced

- 1 large red bell pepper, thinly sliced
- 2 medium carrots, julienned
- 3 packets ramen noodles (discard seasoning packets)
- 1/2 cup chopped green onions
Instructions
- Set your slow cooker to low or high depending on your preferred cook time.
- Add chicken thighs, chicken broth, soy sauce, sesame oil, garlic, ginger, bell peppers, and carrots into the crockpot.
- Give everything a good stir, then cover with the lid.
- Cook on low for 6 to 7 hours or high for 3 to 4 hours until chicken is tender.
- Remove the chicken, shred it with two forks, then return it to the crockpot.
- Add ramen noodles and cook for 10 to 15 minutes on high until noodles are soft.
- Ladle into bowls and top with green onions or any desired toppings.
