Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 6 cups low sodium chicken broth
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 large red bell pepper, thinly sliced
  • 2 medium carrots, julienned
  • 3 packets ramen noodles (discard seasoning packets)
  • 1/2 cup chopped green onions

Instructions

  1. Set your slow cooker to low or high depending on your preferred cook time.
  2. Add chicken thighs, chicken broth, soy sauce, sesame oil, garlic, ginger, bell peppers, and carrots into the crockpot.
  3. Give everything a good stir, then cover with the lid.
  4. Cook on low for 6 to 7 hours or high for 3 to 4 hours until chicken is tender.
  5. Remove the chicken, shred it with two forks, then return it to the crockpot.
  6. Add ramen noodles and cook for 10 to 15 minutes on high until noodles are soft.
  7. Ladle into bowls and top with green onions or any desired toppings.
