- 2 breaded chicken cutlets
- 1 cup romaine lettuce, chopped

- 1/3 cup mayonnaise
- 2 garlic cloves, minced

- 1 tablespoon olive oil
- 1 teaspoon anchovy paste
- 1 teaspoon Dijon mustard

- 1/2 teaspoon salt
Instructions
- Heat a skillet over medium heat.
- In a bowl, mix mayonnaise, garlic, lemon juice, olive oil, anchovy paste, Dijon mustard, salt, and pepper until smooth.
- Add a small amount of oil to the skillet.
- Cook the breaded chicken cutlets until golden and crispy on both sides, then let them rest.
- Lightly toss the chopped romaine lettuce with some of the dressing and parmesan cheese.
- Toast the bread slices until lightly crisp.
- Assemble the sandwich by layering chicken, dressed lettuce, extra parmesan, and additional dressing between the toasted bread slices.
- Serve immediately while warm.
