- 500 grams cheese tortellini
- 1 cup green peas
- 1 small red onion, finely diced
- 1 cup cherry tomatoes, halved
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 2 tablespoons fresh chives, finely chopped
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil.
- In a bowl, whisk together mayonnaise, sour cream, Dijon mustard, lemon juice, garlic, salt, and black pepper until smooth.
- Cook the tortellini according to package instructions, then drain and let them cool completely.
- In a large bowl, combine cooled tortellini, peas, red onion, and cherry tomatoes.
- Pour the dressing over the mixture and gently toss until everything is evenly coated.
- Sprinkle fresh chives and red pepper flakes over the top.
- Chill for at least one hour, then serve cold and enjoy.
