Description

A rich and indulgent chocolate raspberry tart with a crisp buttery crust, silky dark chocolate ganache, and fresh raspberries on top. Perfect for special occasions or an elegant dessert anytime.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/4 teaspoon salt
  • 8 ounces dark chocolate, chopped
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C) and butter a tart pan.
  2. In a bowl, whisk flour, sugar, and salt. Cut in butter until crumbly. Add egg yolk and mix to form a dough.
  3. Press dough into the tart pan evenly and prick the base with a fork.
  4. Line with parchment and fill with pie weights. Bake for 15 minutes. Remove weights and bake 10 more minutes until golden. Let cool.
  5. Heat cream in a saucepan until simmering. Pour over chopped chocolate and let sit 1 minute. Stir until smooth and mix in vanilla.
  6. Pour ganache into the cooled crust. Let sit 20 minutes at room temp, then chill at least 2 hours.
  7. Top with fresh raspberries before serving. Slice and enjoy!
